Blueberry, lemon, coconut, and banana waffles

Ingredients
  

  • 1 ½ cup

    Kodiak Cakes Blueberry Lemon Muffin mix

  • 1 tsp lemon zest (substitute lemon juice if you don't have zest)
  • 1 cup

    frozen blueberries (plus more for sprinkling on top)

  • 1 cup dethawed frozen ripe bananas, mashed
  • 1 tsp

    vanilla extract

  • 2 eggs
  • 2 tbsp

    nonfat greek yogurt

  • 2 tbsp coconut flakes

Instructions
 

  • Heat up your waffle maker.
  • In a bowl whisk your egg for a couple of minutes until it’s frothy.
  • Stir in your dethawed bananas, greek yogurt, vanilla, coconut flakes, and lemon zest.
  • Gently mix in the Kodiak Cake mix and blueberries.
  • Spray your waffle iron with cooking spray.
  • Pour a ladel-size scoop of your batter onto your waffle iron and cook at medium heat until the edges look browned and it’s little crisp. (For me it took about 7 minutes)
