Heat up your waffle maker.
In a bowl whisk your egg for a couple of minutes until it’s frothy.
Stir in your dethawed bananas, greek yogurt, vanilla, coconut flakes, and lemon zest.
Gently mix in the Kodiak Cake mix and blueberries.
Spray your waffle iron with cooking spray.
Pour a ladel-size scoop of your batter onto your waffle iron and cook at medium heat until the edges look browned and it’s little crisp. (For me it took about 7 minutes)
